I was a very spoilt teenager. My mum, being a housewife, never asked us to do house chores or shopping or cooking. At home, my job was to study, get good grades, come back at a reasonable hour and just enjoy family life.
I loved it. But it didn’t teach me anything about living independently. I know realise that it doesn’t matter when you learn it, sooner or later you will have to cook, clean, shop, etc so if you learn while you live at home…Great. But if you don’t…..life will catch up with you and you will have to cook and clean eventually.
Anyway, after finishing university, I moved to the UK to live with my now husband (at that time a total stranger…) and I knew nothing about cooking. So I used to call my mum paper and pen in hand to ask her: “Mum, how do you do this? How do you cook that?”
After a few months I had a bunch of papers with multiple recipes that I used to adjust depending on our budget and our fridge contents.
One thing I could always rely on being able to cook was “Pisto”, I think the British people call it Ratatouille.
The original one is just made of onions, green peppers and tomatoes but in time I learnt that there are many combinations that are as tasty as my Mum’s original one.
The Pisto that I like the most is the one with courgettes. See the recipe below.
1 small white onion
2 or 3 green or red peppers
2 or 3 couragettes
1 tin of peeled tomatoes (or several peeled soft tomatoes)
one table spoon of olive oil
Salt
Laurel Leaves
You can eat Pisto with any protein. It is a typical Spanish dish to have two fried eggs and pisto. I like it more with meat, like a pork chop or a lamb chop but you can eat it with anything. For those who are vegetarians, chick peas and pisto is a great combination.
If you don’t get triggered by wheat flour you can eat it with low carb bread or with other types of bread, like bread made of almond flour or chick pea flour.
It is an excellent low carb dish. Enjoy it!
